This is the cookbook that I return to again and again - every recipe in it has been a hit with my husband (who doesn't realize that what he's eating is "healthy) and myself. The recipes are usually quick to prepare, call for a minimum number of "unusual" ingredients (I hate it when I have to buy in spices to prepare a single dish, and that's not the case with this collection), and taste fresh without tasting low fat.

My favorite cookbook - L. Portz - Wesley Chapel, FL USA
I've used all the Cooking Light cookbooks - this is the one I always return to. I can always find something when I'm searching for a menu plan. I haven't found a mediocre dish in this book yet. Great variety and lots of choices for the basics (like: chicken etc). Easy, clear directions using mostly have-on-hand or easy to find ingredients.

I am not a great cook so I love the short and easy recipes. Also, the beautiful pictures are truly inspirational. Best of all, the recipes actually turned out the way described! Highly recommended for health conscious, non-chef/good cook wannabes.
