Mastering the Art of French Cooking, Vol. 1 Review

I love to cook, but unfortunately, I have not mastered many techniques required by some recipes. Mastering the Art of French Cooking I is not only a recipe book, but a wonderfully descriptive guide to cooking. After weeks of reading and perusing the recipes, I decided to make my first dinner this past Saturday. I chose to make the Beef and Onions braised with beer, parsley potatoes, and of course, the chocolate-almond cake. Being a novice, it took me about 6 hours to make everything. Some of that time was spend running back up to the store to gather an ingredient or cooking tool that I neglected to get initially. It was a lesson learned - I had forgotten to scour all the different pages thoroughly and check my list a few more times. The other problem was my lack of skills. I went through many eggs to get 3 perfectly seperated; then I still had a problem with getting the whites to form stiff peaks. The downside of this book is there is a lot of page flipping when preparing a meal. The upside? The meal was one of the best I'd ever made, and everyone loved it. I can't wait to try other recipes out. I plan on eventually ordering the second book.

Mastering the Art of French Cooking, Vol. 1 Overview

Revised edition of the classic cookbook, originally published in 1961.

Mastering the Art of French Cooking, Vol. 1 Specifications

This is the classic cookbook, in its entirety—all 524 recipes.

“Anyone can cook in the French manner anywhere,” wrote Mesdames Beck, Bertholle, and Child, “with the right instruction.” And here is the book that, for more than forty years, has been teaching Americans how.

Mastering the Art of French Cooking is for both seasoned cooks and beginners who love good food and long to reproduce at home the savory delights of the classic cuisine, from the historic Gallic masterpieces to the seemingly artless perfection of a dish of spring-green peas. This beautiful book, with more than 100 instructive illustrations, is revolutionary in its approach because:

• it leads the cook infallibly from the buying and handling of raw ingredients, through each essential step of a recipe, to the final creation of a delicate confection;

• it breaks down the classic cuisine into a logical sequence of themes and variations rather than presenting an endless and diffuse catalogue of recipes; the focus is on key recipes that form the backbone of French cookery and lend themselves to an infinite number of elaborations—bound to increase anyone’s culinary repertoire;

• it adapts classical techniques, wherever possible, to modern American conveniences;

• it shows Americans how to buy products, from any supermarket in the United States, that reproduce the exact taste and texture of the French ingredients, for example, equivalent meat cuts, the right beans for a cassoulet, or the appropriate fish and seafood for a bouillabaisse;

• it offers suggestions for just the right accompaniment to each dish, including proper wines. Since there has never been a book as instructive and as workable as Mastering the Art of French Cooking, the techniques learned here can be applied to recipes in all other French cookbooks, making them infinitely more usable. In compiling the secrets of famous cordons bleus, the authors have produced a magnificent volume that is sure to find the place of honor in every kitchen in America. Bon appétit!

A Master Work - Geoffrey A. Phillips -
This is the second copy of this book that I bought since my original is in storage somewhere in Michigan. Julia is a master at telling you what to do as well as why to do it and how to recover from inevitable mistakes. Cooking her way does take us back to a time when people actually made time to cook. I enjoy taking the time to make the delicious dishes described in here. Many recipes are actually quite quick and they always lead me to try something new, which is the sure path to a more fulfilling experience in the kitchen. A master work.

Julia: Her wisdom in the kitchen!! - valerie reed - Hendersonville, NC, US
I'm so thankful for this book, as a keepsake, no less, but as a wonderful addition to recipe files in my
kitchen. Julia Child's wisdom is much appreciated, especially in her evaluation of the French style. Can't wait
to begin experiencing the tastes and smells from "Mastering the Art of French Cooking."

Cooking Light Superfast Suppers: Speedy Solutions for Dinner Dilemmas Review

This is a great book... we have made about 5 recipes from it so far and most of them have been good, though one was a little bland and I had to doctor it. One thing I like about the book is that most of the recipes give you 4 servings, which is great when you're cooking for two. You have enough for leftovers the next day, but you're not eating leftovers over and over again for a week. There is a whole section of recipes for use with "on hand" ingredients... it gives you a list of 20 or so ingredients to keep on hand and a variety of recipes you can make with those ingredients. Some of the recipes in the book use convenience foods, like Stouffers frozen pot roast dinner, so you have to be careful of the sodium (there's a warning right on the recipe about the sodium content). I substituted Smart Ones pot roast dinners, which didn't make for a cheap recipe, but it was healthier than the other options and easy to make.

Cooking Light Superfast Suppers: Speedy Solutions for Dinner Dilemmas Overview

In a world that makes ever-increasing demands on people`s time, Superfast Suppers is indeed a lifesaver. Clever and always quick, Superfast Suppers will revolutionize your cooking with no loss of nutrition and no compromise in taste. Especially notable are the 20 recipes with less than 10 minutes of prep time, the 10 slow-cooker dinners and the 25 `Deadline Desserts` which require only 15 minutes from beginning to `yum!` Finally, this book boasts the unique `Have It Your Way` chapter that lets everyone create their own special meal from one basic item and a plethora of toppings. It's Good; Not Sure if "Superfast" is the Word, Though... - Rosie Tomyn - Puyallup, WA USA
I just received this cookbook and was super excited to see some pretty awesome recipes in it. My only question is about the choice of the term "Superfast." To me, a wife that works full time, weekday dinners need to be fast. And, there is a plethora of information out there on fast meals, but most aren't too healthy. I need a combination of both. And, I thought this would be it.

But, I think the term fast means something different to me. These are quick, easy recipes for 7PM on a Monday when I get home. These require a lot of additional prep that I wasn't looking for.

It will be great for weekends when I have more time, but for weekdays, I continue my search. Looking for the holy grail that is the truly healthy, yet quick, weekday cookbook. The search continues! =)

The Everything Organic Cooking for Baby and Toddler Book: 300 naturally delicious recipes to get your child off to a healthy start (Everything Series) Review

I own so many baby & toddler cookbooks. I have always made my own organic baby food. Honestly, until probably 10 months you don't need a book because you can only try one new thing every few days - you've got to try them before you can combine them. This is the one book I wish I would have had when he was around 10 months. He loved organic lentils out of the jar (we used when traveling) but I had no good baby lentil recipes. This book provides a lot of vegatarian recipes that contain mostly things I already had on hand (had to buy coconut milk & flax oil). I was really happy to see several recipes using quinoa & lentils for protien sources - it's hard when my little guy only wants eggs & peanut butter for protien. I only wish they had some pictures.

This book gives readers all the tools and know-how they need to shop economically, find the best organic foods, and prepare the perfect meals for their little ones.

Looks delicious - Jenny S - Mesa, AZ
I purchased this for a friend as part of the baby shower gift. I did go through it and found a whole bunch of delicious looking recipes that I would love to make for my 3 yr. old so I am also going to buy it! The recipes were simple and not time consuming which is what I need.

Complete waste of money - anna_r - San Jose, CA
I'm very disappointed by this book. It turned out to be a complete waste of my time and money.

I was looking for two things: some sort of a schedule of what foods can be introduced at what age, and good tasting baby food recipes - rather, combinations of ingredients. Recipe is such a strong word for baby food :) Since the target audience for this book is interested in cooking organic, you can safely assume that they all know how long it takes to steam cook carrots...

This book provided neither of the things I was looking for. Not sure if the author tasted any of the foods she suggests in the book - it sure doesn't look like it! And if you don't like the taste, why would your baby? I tried several recipes and they tasted simply horrible. In all honesty, I can't attribute this to bad cooking or bad ingredients - it's a simple puree made of fresh veggies after all! Let's face it: quinoa just doesn't taste good. Like most of the combinations suggested in the book. It was also very odd that they kept calling buckwheat 'kasha' - it's simply not correct. I am of Eastern European decent and the word 'kasha' doesn't mean 'buckwheat' - it stands for ANY cereal. Shows you how well the author did her homework! I wanted this book so that I won't have to waste my time trying dozens of various kinds of veggies/fruit combinations to figure out which ones taste good (I'm a working mom - yeah, yeah, I know, every mom is a working mom, though those of us with a full time job know the real difference!). After all, that's what I ended up doing. And this worked way better than the recipes from this author.

The second disappointment was the lack of any compact easy to follow schedule of when various foods can be introduced. The book does, however, have some information about organic foods (hello, I'm already interested in organics and know the pros and cons!) - and, ta-da! on breastfeeding and formula feeding (hello, my baby is six months old - I have figured this out by now!).

The point is - don't waste your time and money. Seriously. This book provided no info that I hadn't known and was useless in helping with making delicious purees.

Not just for babies/toddlers! - Irishlawlass -
I borrowed this book from the library first and was so impressed with the recipes I bought the book. I have been trying to eat healthier and include things like agave nectar, flaxseed, etc. into my meals. I am also passionate about using organics whenever possible for my now 15 month-old daughter and also for my husband and myself. These recipes are good and they're meals that adults can eat as well and enjoy. It's a nice introduction to eating healthier for any member of the family.

Whose baby eats this??? - E. Payne - Santee, CA
I am a working mom who LOVES to cook, bake, and create. My son has a pretty refined palette and eats a lot of stuff other 10 month olds do not: green veggies, steak, flax meal waffles... but this cookbook is ridiculous. Most recipes require several ingredients and I cannot be bothered with all of work. There are no pictures and I cannot serve my kid the mush recommended in this book. At the same time I purchased this book, I also ordered the Sneaky Chef and spent a week cooking through it. It has food my baby, husband, and I can all eat. (I just use organic ingredients.)

Whisky on the Rocks: Origins of the Water of Life (Earthwise Popular Science Books) Overview

"Malt whisky distilleries use local waters which have percolated through the ancient rocks of Scotland, whose origins may lie in a great continental collision, huge granite masses, the earliest fishy seas, great fiery volcanoes or as far away as South America. I hope there are better books out there, because after reading this one, I'm still struggling to put together a classy shower. Many of the ideas seemed silly, and most of the games would make me run as fast as I could away from the shower.

A Waste of Money! - - Boston, MA USA
I bought this book with the intention of using it to help plan
my sister's baby shower. With the exception of one or two ideas,
I found the book to be of little use. I would recommend browsing through it at a bookstore (with pen and paper in hand)
or borrowing it from someone and saving the money to use towards
the shower you are planning.

Terrible- many of the recipes use Campbell's soup! - International Diva -
This is the first book that I have ever returned to Amazon. I bought this book as one of several "how to cook" books for a friend who is getting married. While there are some useful recipes (how to boil an egg, how to roast a chicken), about one-quarter of the recipes are taken verbatim from Campbell's soup cans, including the infamous green bean casserole. Some are other famous 'label' recipes such as tollhouse chocolate chip cookies. The recipe for tacos calls for a packet of taco seasoning; the instructions are identical to the package directions. You don't need a book to be told how to open a can or a seasoning packet and mix it with stuff. To me, that barely qualifies as cooking.

On the subject of gravy the author notes, "gravy is too hard; just buy jars of gravy and hide the jars!" Seriously? Of the apparently original recipes, some of them simply don't make sense or are just incredibly unhealthy. For a pasta with brie, the author instructs using a pound of brie with a pound of spaghetti for four people. A normal serving of cheese is about two ounces but that comes out to four ounces of brie per person, or about 400 calories and 120% of recommended daily fat intake -- just from the brie alone.

There are no illustrations or photos to aid a non-cook, which also limits the usefulness of this book. If you're looking for a good primer, I suggest "How to Cook Without a Book" by Pam Anderson or even "The Way to Cook" by Julia Child. If you're looking for healthier foods on a budget, try "Less is More."

Good, not great... glad to have in collection. - Megan Wolfarth -
It's exactly what the title says. I found if I need tips on basic standards, it's a great tool. I am a beginner, but I underestimated what I already knew, so if you are a true beginner, this book is for you.

Great book! - Jessica A. Braud -
This cookbook makes cooking amazingly easy. It even tells you how to boil water! Even when I'm not using specific recipes it's great for getting inspiration for new dishes!

Great Vegetarian Dishes Review

I bought this cookbook about 10 years ago from a Hare Krshna (I technically made a "donation" to receive it) and I have to say it's one of the most used and enjoyed cookbooks in my extensive collection.

You don't have to be a vegetarian or into any kind of Eastern religion to enjoy this cookbook. This book was my introduction to Indian food in general, and after trying a few recipes, I realized, "you know, I really could be a vegetarian if I ate food like this all the time."

This is a beautiful full-color cookbook with excellent photos, and is therefore different than some of the other cookbooks that Hare Krishna people give away in the airport or on the beach. In terms of promoting the Hare Krishna philosophy, I can't think of a better method... once you try a few of these dishes, you'll be tempted to chant the mantra a few times.

There are two recipes from this book that I use all the time: "Mexican-Style Beans and Salad on Fried Tortilla" (the author's fancy way of saying "Tacos"); and the "Asparagus and Pine Nut Pizza." I've actually used these two recipes as a point of departure for making all kinds of other dishes using the basic dressings and sauces that book author Kuma teaches here.

Hare Krshna cooking is pretty interesting in that not only is it vegetarian, but it does not use garlic or onions either... whoa! You would think in a vegetarian diet you need all the help you can get to keep things flavorful, and how can you do without these staple ingredients?

What ends up happening is that by leaving out the garlic and onions, you find yourself encountering entirely new flavors with some of the unique Indian ingredients that have a chance to express themselves without being overpowered.

To get the full value of this cookbook, you will need to take a trip to your local Indian grocery store and hunt down a few of the more obscure ingredients -- like the ubiquitous "hing" (asafoetida), a sulfury yellow powder which more or less becomes your substitute for garlic.

I highly recommend this book to any vegetarian or gourmet.

Great Vegetarian Dishes - Cheryl A. Harrison - Australia
I love this book had it for years and misplaced it. Just had to get a replacement. I'm not much on eating my vegies but this book makes it easy and interesting. Really glad I was able to get a copy.

Good recipes but I can't overlook author's ignorant statements... - Cherie J. Anderson -
This book has some good recipes, as has been stated already, but I have two points to make that might be of interest to others when considering buying this book.
1) The author states at the beginning of the book that the purpose of cows is to give us [meaning humans] milk. Now, I would expect that type of a statement perhaps from the brainwashed 3-year-old daughter of a dairy cow "farmer," but not from a grown adult who, presumably, had biology classes and/or has some understanding of mothers and their babies. I understand that sometimes vegetarian cookbooks are lacto-ovo or the watered-down definition of "vegetarian," and I don't fault those books for being such; however, I think the author's statement is shocking and actually horrifying that he would be so selfish to think that a mother cow providing milk only at a time she has a calf would be his for the taking. I won't ramble on about that, since this review needs to be about the book itself.

2) There are so many fried foods in this book. I don't think I've ever seen a cookbook with more deep-fried food recipes! I know that fat and oil taste good and provide a crunch to food, but I sure hope no one eats that way every day or even every week. I'm sure some can be baked instead. I would note these may be good in making dishes for omnivores and lacto-ovo vegetarians [or people used to high-fat food] who might find lower-fat items bland.

A MUST HAVE IN THE KITCHEN!! - B. P. Blumette - Los Angeles, CA United States
I have been a vegetarian since i was born and i LOVE cooking. I have probably had this cookbook for 10 years and have used it regularly along with three other cookbooks by Kurma. I do eat dairy (organic and with no animal hormones or any other animal ingredients) but i have never eaten any meat, fish, eggs, chicken or gelatin.

If you like to eat food that actually has taste than this cookbook is an essential for your kitchen! A lot of the time people think that vegetarian food is some tasteless tofu or a little salad.....because "WHAT IN THE WORLD DOES A VEGETARIAN EAT??" I have heard that question many times. Well we eat a variety of things and this book is a great tasting way to understanding what good vegetarian food tastes like!

The spices aren't so hard to find......mostly they will come from your local indian grocery store (which are actually quite common) or even the regular grocery store and you might spend a bit to buy most of them but they last for quite a while and you will have more freedom in deciding what you are going to cook. I would say that its a little more challenging to find the ingredients for the chinese and thai dishes just because they are much more unfamiliar but never hurts to try and it will be worth it when you get to eat! Also for those of you who don't like garlic or onions or both...Kurma offers a great alternative called hing or sometimes aesfatita (which is a yellow powder spice from india)which works great.

In addition to cooking with Kurma i would recommend Yamuna's Table although i haven't spent as much time with her recipies..... i have used them and they turn out excellent as well but require more ingredients and preperation time.

I really love the carob cake.......you might be worried that 'without eggs how can you make a cake?' but it turns out perfect every time. I have to admit that i am a chocolate lover and so i use chocolate instead of carob.....but thats the beauty of these recipies.... have fun with them...improvise a little! ENJOY! I know i am!!

Check Out The Professional Chef for $38.84

The Professional Chef Review

If you were to read this book cover-to-cover, you would know exactly what was being talked about on any cooking channel. But then you'd also be able to separate the pretenders (like Rachel Ray, Bibby Flay, and the "slap-it-on-a-plate" gang) from someone who at least loves the craft (Emeril, Anthony Bourdain) despite cutting a lot of corners. Moreover, you would save yourself decades of frustration in the kitchen by merely understanding the science nutrition combined with the technology of cooking (teche, or technique). And at the end of your life, if you accomplished nothing else, you might be able to look back and say, "Well, at least I ate like a king!"

Get this book, then read it. Internalize it. Teach it to others. It will be worth it.

The Professional Chef Overview

Next to their knives, the tool America's top chefs have used to learn their cooking skills
The Professional Chef, the official text of The Culinary Institute of America's culinary degree program, has taught tens of thousands of chefs the techniques and fundamentals that have launched their careers.
Now in a revolutionary revision, The Professional Chef, Seventh Edition not only teaches the reader how, but is designed to reflect why the CIA methods are the gold standard for chefs. With lavish, four-color photography and clear, instructive text, The Professional Chef, Seventh Edition guides culinary students--professional aspirants and serious home cooks, alike--to mastery of the kitchen. Over 660 classic and contemporary recipes, with almost 200 variations, were chosen especially for their use of fundamental techniques. These techniques and recipes form a foundation from which a professional chef or home cook can build a personal repertoire.
From mise en place (preparation) to finished dishes, the book covers Stocks, Sauces, and Soups; Meats, Poultry, Fish, and Shellfish; Vegetables, Potatoes, Grains, and Legumes, Pasta and Dumplings; Breakfast and Garde Manger; Baking and Pastry. In addition to a comprehensive treatment of techniques and recipes, The Professional Chef, Seventh Edition teaches readers other critical elements of the professional chef's domain--much of it universally applicable to any kitchen. From "An Introduction to the Professional," to the identification of tools and ingredients, to nutrition, food science and food and kitchen safety, the book is a wealth of beautifully presented information useful for any cook.
The Culinary Institute of America has been hailed as "The nation's most influential training school for professional cooks" by Time magazine. The Professional Chef, Seventh Edition, the cornerstone of its program in book form, belongs on the shelf of every serious cook.
The Culinary Institute of America (Hyde Park, NY, and St. Helena, CA) was founded in 1946. Known as the Harvard of cooking schools, and credited with having "changed the way Americans eat" by the James Beard Foundation, CIA has trained tens of thousands of foodservice professionals.

Pro-chef book review - L. Stefano - Sandpoint, ID
Very pleased w/the Pro. Chef book. Am using it in conjunction w/the "on Cooking" textbook, used by the CIA (culinary institute of America). I like the way the Pro-chef book is layed out. It is very step-by-step and clearly and concisely written. An excellent tool.

A Textbook for Professional Chefs - Tax Writer - Maui
This is a textbook, NOT a cookbook. It covers all the culinary information that you would review in a college course. I wish the book covered more about how to actually run a restaurant and a kitchen in the real world. Chefs eventually graduate--they don't work in a vacuum. But the scope of this book is mainly about how to prepare food, handle knives, and the definitions of exotic foods (what exactly is clarified butter, etc.).

Not for the beginning chef! - George R. Ferguson - Chicago
Very technical. I am probably a better cook than the average person and have a hard time with this one sometimes. It's kind of like a cooking encyclopedia. Good for the academic chef. There are many good tips in it and plenty of recipes that will impress non-chefs (as long as you don't mess them up too much)
A bit pricey though

Purchase for my daughter, who works fulltime. She has enjoyed these quick, fast, easy recipes. She likes to cook healthy also and feels this is a good cookbook to have in your collections for good easy recipes.

I want to like it - Claire Green -
I want to eat healthy and I want to like this cookbook, but I cannot eat seafood. Even reading about seafood or looking at pictures of it makes my stomache upset and I feel like vomiting. It would be nice to find a healthy cookbook that is not loaded with seafood.
